Australian thoor dhall which is also known as pigeon pea is harvested for different purposes.The bright green seed is preferred for use as a vegetable. Hence, pods should be harvested just before they start losing their green color. Thoor dhall should be harvested when 75-80% of the pods turn brown and are dry. The plant is cut at the ground when the majority of pods have reached maturity. The plants are air dried and then threshed to remove the seeds.

Austarlian dhall is consumed fresh as a vegetable. Thoor dhall can be used with vegetables, as dried pea or can be grounded into flour. When cooked along with cereals, thoor dhall makes a balanced diet. Split peas can be pureed and served. It can also be added to salad.
